Healthy vegetarian recipe: Ayurvedic Tridoshic dal

This healthy Ayurvedic Tridoshic dal is very light and easy to digest. It is an excellent option for those suffering from diarrhoea, Irritable Bowel Syndrome (IBS) and indigestion. According to Dr Partap Chauhan, director, Jiva Ayurveda. if you eat this dal regularly, it will help in cleansing your body internally and make you ama free. This recipe is very simple and rich with nutrients from ingredients like split moong dal, vegetables like summer squash (chhappan kaddu), spices and herbs. Try making this for lunch or dinner.

- 1 cup split moong dal
- 8 cups water
- 2 cups summer squash, in ¼ to ½ inch slices
- 1 cup carrots, in ¼ to ½ inch slices
- 1/8 teaspoon hing
- 1/2 teaspoon of coriander powder
- 2 tablespoons sunflower oil or ghee
- ¼ teaspoon of turmeric
- 1 tablespoon lime or lemon juice
- 1 teaspoon sea salt
- ½ tablespoon fresh ginger root, minced
- 1 small hot green pepper, chopped finely (don’t have it if you have pitta, and have less if you have vata)
- ½ teaspoon cumin seeds
- ½ teaspoon to 1 tablespoon black mustard seeds (very little for those with pitta, more for vata and kapha doshas)
- Garnish with fresh coriander leaves.

Try this healthy Ayurveda weight gain recipe.

- Wash dal and chop vegetables.
- Warm one tablespoon oil or ghee in a saucepan.
- Add hing and cumin seeds. Then add all the spices and two teaspoonfuls of water. Sauté for 30 seconds over low heat (be careful, it is easy for spices to burn).
- Stir in the dal and sauté for another 1 to 2 minutes. Add chopped vegetables and stir another minute or two.
- Add water, salt, ginger and pepper (if you are using it), bring to a boil on high heat. Then cover and reduce heat to medium-low.
- Let the dal simmer for 45 minutes or until the dal is mushy in texture.
- In another small skillet, add cumin and mustard seeds to ghee and heat until these seeds being to pop. Add this to the dal.
- Garnish with fresh chopped coriander leaves.
