Mention golgappa and we start salivating instantly. This mouth-watering snack is the oldest and still is the most loved street food of India. Go anywhere in the country, you'll find a queue waiting to devour it, at some place or another. But, if you are one of those who prefer home-cooked foods and avoid outside foods, especially from the germy streets, you can try making golgappa at home. Yes, making golgappa is as easy as making puri or bhatura. You can make water for golgappa (golgappe ka pani), prepare potato stuffing for golgappa, and also golgappa shells; all in less than one hour.

There are two kinds of golgappa available almost everywhere. One is atta golgappa and another is suji golgappa. The recipe video on YouTube channel 'Cooking With Reshu' shares some quick and easy steps to make suji golgappa. Mix suji and oil thoroughly so that the golgappas turn out to be crispy. Knead dough with lukewarm water only. Let the dough rest for some time, and knead it again to make it soft and not too tight. Divide it into two parts. Take a cap from any bottle at home and place it upside down on the rotis made from the dough; press it hard all across the roti so that you get a number of small rotis. Fry these rotis till they fluff up, turn crispy, and light brown. Take the golgappe out and place on absorbent paper, which will soak extra oil. Also, keep in mind, to spread them out on the plate so they don't squish each other and remain crispy.
