Healthy Breakfast: Eggs Florentine

What you'll need:

2 tsp unsalted butter

2 tsp unsalted butter

2 eggs

1 whole-wheat English muffin, split and toasted

Salt and pepper

How to make it:

Preheat oven to 350°F. Melt butter in a small skillet over medium heat. Add spinach and stir until wilted. Remove from heat. Coat two 1-cup custard cups with nonstick spray and add 1 tablespoon water to each. Break an egg into each cup. Bake for 15 to 20 minutes. Top each half of the English muffin with half the spinach and an egg. Season to taste.
